¡Hi Spaneasiers! In Spaneasy we want you to live an actual Spanish immersion, that is why we are going to show you how to cook arroz con leche. It is a traditional dessert made with milk and rice. We love having it after lunch, but also as breakfast in the morning or as a snack in the afternoon. No one who has a sweet tooth can resit this delicious dessert!
Ingredients
1.5 liter milk
200 gram rice
Peel of a lemon
180 gram refined sugar
25 gram butter
3 cinnamon sticks
Water
Method
Step 1: Soak the rice in boiling water (1.5 liter) for 20 minutes. Then drain the rice.
Step 2: Soak the cinnamon sticks, the butter and the peel of a lemon in milk (1.5 liter). Remember that we just want the yellow part of the peel, otherwise the white part would make the dessert bitter.
Step 3: When the milk starts boiling, take half of it along with a cinnamon stick and a piece of the peel and keep it warm in a different saucepan.
Step 4: Now we have two different saucepans. Take the first one and add the rice in it. Let it boil and stir the rice constantly.
Step 5: Once the milk has reduced, use the milk of the second saucepan and add it slowly to the first one.
Step 6: In about an hour and a half, all the milk will have reduced and will be creamy.
Step 7: Let it cool and sprinkle cinnamon. Your traditional arroz con leche is ready to be served. Enjoy!
